Lots of ice and ripe peach make this the perfect smash cocktail on a warm summer's eve.

2 oz. Square One Botanical
3 lemon verbena leaves
1 thick slice of ripe white peach
1/4 oz. lemon juice
1/4 oz. organic agave nectar
1 dash Fee's Pech Bitters
1 thin slice of peach and 1 lemon verbena leaf for garnish.

Muddle lemon verbena and peach in rocks glass. Add lemon juice and agave nectar and top with lots of crushed ice. Pour Square One Botanical over crushed ice and stir well with a bar spoon. Garnish with a thin peach slice and lemon verbena leaf.

Wild, Wild Life |

Cilantro's brightness in this simply refreshing cocktail.
1.75 oz. Square One Botanical
.25 oz. Square One Organic Vodka
2oz. Pineapple Juice
handful of fresh cilantro

Muddle cilantro at the bottom of a Collins glass. Add spirits and stir. Add ice and juice and stir again. Garnish with a pineapple chunk with a cilantro leaf on a skewer.

1.5 oz. Square One Botanical
.5 oz. Four Rose Single Barrel (or other high-rye bourbon or rye whiskey)
.25 oz. of St. Elizabeth All-Spice Dram
.25 oz. demerara syrup (or dark agave nectar)

Stir all ingredients with ice for 45 seconds. Strain into a chilled cocktail glass. Garnish with a thin slice of pear..

Pear of Roses |

In this appetizing cocktail, we focus on the pear, rose, and rosemary botanicals found in Square One Botanical.
1.5 oz. Square One Botanical
.5 oz. Meyer lemon juice
3 inches of rosemary leaves
1 oz. of pear juice
.5 oz. Sonoma Syrup Co. Lavender Syrup
small rosemary sprig and Meyer lemon wheel for garnish

Strip 3 inches of rosemary leaves into a mixing glass and muddle lightly. Add the remaining ingredients and fill with ice. Shake well and double strin straight up into a cocktail glass. Garnish with a rosemary sprig pulled through a Meyer lemon wheel.

Ginger & Ginger |

Rico Wisner of Poste Moderne Brasserie in Washington DC created this recipe as part of the Domaine de Canton Bartender of the Year competition.
1 oz. Square One Botanical
1 oz. Domaine de Canton
3/4 oz. J Pear liqueur
1/2 oz. fresh lemon juice
1 tsp. honey cactus powder
3 slices Seckle pear
1/2 oz. Brut champagne
|
Muddle Seckle pear and honey cactus powder together with lemon juice. Add Domaine de Canton, Square One Botanical, J Pear, and ice. Shake ingredients together, double strain through a Hawthorne and fine mesh strainer into a chilled saucier. Top with champagne. Garnish with slice of poached (in 2:1:1 water:canton:cactus powder) Seckle pear.

Armsby Abbey in Worcester, Massachusetts created this refreshing martini featuring Square One Botanical. This cocktail is a beautiful bouquet of fruit blossoms and herbs.
1 1/2 oz. Square One Botanical
1/2 oz. Hanger One Mandarin Blossom Vodka
1/2 oz. CITRY Orange Liqueur
1/2 oz. fresh lemon juice
1/2 oz. simple syrup
1 1/2 Mightly Leaf Chamomile-Citrus Tea
Mist of orange flower water
Edible flower as garnish

Mist a chilled martini glass with orange flower water. Pour all cocktail ingredients in a shaker and shake with ice. Strain into prepared martini glass and garnish with floating edible flower.

Botanical Punch |

Square One Botanical's fruit and floral qualities are heightened in this riff on the classic Pimm's Punch.
2 oz. Square One Botanical
1 oz. Pimm's #1
1/2 oz. fresh lemon juice
1/2 oz. agave nectar
2 strawberries
2 slices cucumber
2 sprigs of mint
ginger ale or ginger beer

Muddle 1 strawberry, 1 mint sprig and 2 cucumber slices in a cocktail shaker. Add other ingredients (except ginger beer) and shake with ice. Strain into a Collins glass filled with ice. Top with ginger ale/beer. Garnish with mint, strawberry and cucumber wheel.

Rose 75 |

An American spin to the French 75.
1.5 oz Square One Botanical
.5 oz. ruby red grapefruit juice
.5 oz. Sonoma Syrup Co. Lavender Syrup
2 oz. California rose sparkling wine |
Shake all ingredients, except champagne, in a cocktail shaker with ice. Strain into a champagne flute and top with rose sparkling wine.

2 oz. Square One Botanical
1/2 oz. fresh lemon juice
1/2 oz. organic agave nectar
1/2 bar spoon of Absinthe

Pour absinthe into a chilled cocktail glass, swirl to coat the glass and shake out excess. Pour all other ingredients into a cocktail shaker filled with ice. Shake hard and strain. Garnish with lemon twist.

Combine all ingredients in a mixing glass. Stir with a bar spoon, and pour into a chilled martini glass.

Flower Sour |

A floral riff on the classic Sour cocktail.
1.5 oz. Square One Botanical
1 egg white
1/4 to 1/2 oz. organic agave nectar
1 oz. Sonoma Syrup Co. Lavender Syrup
5 - 6 kumquats
Regan's Orange Bitters as garnish

In a mixing glass muddle the kumquats. Add the other ingredients, and dry shake (no ice) for 5 seconds. Add ice and shake well for 10 seconds. Strain over fresh ice and garnish with a few drops of Regan's Orange Bitters.
Variations: Substitute the kumquats for other citrus, like 1 oz. of blood orange juice, Eureka lemon juice, or Meyer lemon juice (cut syrup back by 1/4 oz.) Or try 1/2 oz. eaach of lemon and lime juice.

Botanical Basil Gimlet |

4-5 leaves of basil, torn (also try Thai or Lemon Basil)
2 oz. Square One Botanical
1 oz. fresh lime juice
1/2 oz. organic agave nectar |
In a mixing cup muddle basil briefly with a muddling stick or back of a wooden spoon. Add crushed ice and other ingredients. Shake vigorously for 10 seconds. Strain into a chilled martini glass. No need for a garnish as little bits of basil will be floating in the cocktail.

Pink Peppercorn |

Pink Peppercorns add appetizing complexity to this delicious combination of Square One Botanical, fresh lime juice and rich agave nectar. .
2 oz. Square One Botanical
1/4 tsp. pink peppercorns
1/2 oz. agave nectar
1 oz. fresh lime juice
lime wheel and pink peppercorns for garnish

Muddle peppercorns in a mixing glass. Add remaining ingredients and shake with ice. Double strain into a highball glass filled with fresh ice. Garnish with a lime wheel and peppercorns.

1/2 oz. Aperol
1/2 oz. fresh lemon juice
1/4 oz. organic agave nectar or simple syrup
Club Soda

Place all ingredients into a Collins glass with ice. Stir with a spoon and garnish with cherry and or orange slice.

A modern Botanical riff on the classic Negroni cocktail. Especially well suited for people who like a sophisticated dry spirit-driven cocktail.
2 oz. Square One Botanical
1/4 oz. Campari
1/4 oz. high-quality sweet red vermouth

Combine all ingredients in a cocktail shaker with ice. Shake briefly and strain into a cocktail glass. Garnish with an orange twist.

Blackberry Shrub |
 |
1 1/2 oz. Square One Botanical
1/2 oz. Rhum Clement Creole Shrubb
1/2 oz. blackberry shrub syrup
1/4 oz. fresh lemon juice
ginger beer
2 sprigs of rosemary
2 blackberries for garnish

In a mixing glass, add leaves of one-inch sprig of rosemary and all ingredients except ginger beer. Shake with ice and strain into a Collins glass filled with ice. Topw with ginger beer. Garnish with a rosemary sprig with two blackberries speared onto stem.
Shrub Syrup: In a saucepan, boil 2 cups of water, 1 cup of sugar and 1 1/2 cups of blackberries until reduced to 2 cups. Strain out the berries. (Reserve whole berries and freeze them for garnish.) Put berry syrup back into pan. Add 1 cup of balsamic vinegar and simmer on medium low for 20 minutes. Transfer to a container and refrigerate.
